Country Store "fried" Apples

This is an excellent recipe! It is a duplicate of the Cracker Barrel recipe but healthier! I got the recipe from the Columbus Dispatch last year.
This recipe removes the apple peel but Cracker Barrel leaves them on. I always leave the peel on--they are just as good with the peel on -plus you get the benefit of extra fiber --and we all need that, don't we?

I made this yesterday in my Crock pot- Oh how I LOVE my Crock pot! I doubled the recipe and turned it off after 4 1/2 hours but let it sit and continue cooking in its own heat. They were soft and delicious. I used Granny Smith apples. I got them at Aldi. 3# for 99 cents! My comments/changes to the recipe are in italics.
Here is the Recipe:

Country Store "Fried" Apples
makes 8 servings

5-6 cups firm, tart apples, such as Cameo or Granny Smith (about 2 1/2 pounds or 4 medium apples)
1/3 cup brown sugar
1 tsp cinnamon
1/4 tsp nutmeg
2 Tbspn cornstarch
1/2 cup apple cider (you can sub apple juice if that's all you have)

Peel(optional), core and cut apples into medium to thick slices. Place apples, brown sugar, cinnamon, and nutmeg in a small to medium slow cooker (Crock pot)
Dissolve corn starch in apple cider and blend well. Pour over apples and stir to blend.
Cover and cook on low 5 to 6 hours; stir halfway through cooking.

Per serving: 102 calories; 0 protein; 25g carbohydrates; 3g fiber (more if you leave peels on apples!) ; 0 fat; 0 cholesterol; 6mg sodium
