Lentils and Brown Rice



With holidays and travel plans etc., there is a tight squeeze on the December budget. Tonight's dinner is one of the most frugal I have up my sleeve and thanks to Sue Gregg's recipe, this has become a favorite of my family.(from Main Dishes www.SueGregg.com) It is great for when we need to save some money and also as a sort of detox after eating not so healthy. We usually put cheese on top with some salsa and fat free sour cream. The kids love it in a burrito shell too.
I always double the recipe and in the summer months I cook it in the crock pot (which comes out a little mushier than baked)
The recipe is so easy too!
3/4 cup lentils, green or red
1/2 cup long-grain brown rice
1/4 cup instant minced onion or 1 small onion, chopped
3 cups water or chicken broth (add 2-3T Bragg's or something else for added flavor if using water)
1/2 tsp. dried basil
1/4 tsp dried oregano
1/4 tsp dried thyme
1/4 tsp garlic powder
Cover and bake at 300 F for 2-2 1/2 hours (about 4 hours in crock pot on HI)



Here it is with melted cheese....Yummy!!
